La première «viande éprouvette» est pour bientôt. [...] Les cellules souches en question, celles à l’origine des cellules musculaires striées squelettiques, permettraient de reconstituer in vitro du muscle (de la viande donc) et pourquoi pas, un jour, de remplacer totalement la viande issue des élevages. Pour le moment, le chercheur n’a réussi à produire que des petits morceaux de tissu musculaire, mais il est confiant : d’ici l’automne, il aura agrégé suffisamment de morceaux pour créer le premier stem (en référence à «stem cell», cellule souche en anglais) steak haché!
